Equipping the Ebony Mail doesn't complete the quest
What happens
Equipping the Ebony Mail straight from the Champion's body doesn't advance 'Retrieve and equip the Ebony Mail'.
PS5-safe fix
Drop the Ebony Mail on the floor, pick it up again, then equip it.
